While we are very much in the midst of the indulgent season, we're also aware that the approaching New Year can bring on a feeling of reevaluation... So, to get the best of both worlds, we've created a cocktail that is satisfying, delicious and good for our bellies — all at the same time!
juice of 2 lemons
1 tablespoon raw honey
2 small pickled vegetables of choice (we used dill-pickled radish but a slice of dill pickle or pickled carrot would be great)
1 tablespoon pickling liquid from vegetables
good quality tonic
Place gin, lemon juice, honey and pickling liquid in a cocktail shaker and top with ice. Shake vigorously for 10–15 seconds. Strain into two ice-filled glasses (we used Monmouth green glasses which were a gorgeous match) and top with tonic. Garnish with a pickle and herbs of choice.
