A Long Weekend Soirée

Recipes for a light drink and a little nibble...

As the long weekend approaches we're already making considerations on how we're going to fill our extra day of downtime. Stretching out the afternoon and squeezing out the last of the sunlight hours, our recommendation is to sit down for a light drink and a little nibble. 

Below are two not-really recipes, the first is for Lillet Blanc (pronounced lee-lay), a French aperitif. Effervescent and refreshing, it's the perfect drink to mark the end of an afternoon. And to compliment that, an easy on-a whim snack of Tamari Nuts, a sure-to-impress your tastebuds kind of recipe...

Lillet Blanc

Serve either chilled and neat or paired with ice, adding a slice or two of lemon. Or mix with tonic water, as we have here. 1 part Lillet, 2 parts tonic water.

Tamari Nuts

120g almonds
110g raw cashews
100g Brazil nuts
55g shelled pistachio nuts
2 teaspoons wheat-free tamari sauce
1 1/2 tsp honey
1/2 tsp sesame oil
1/2 tsp ground coriander
1/4 tsp chilli powder

Preheat the oven to 180C. Combine the nuts and spread over an oven tray. Bake for 14 minutes or until lightly browned, tossing halfway through cooking.

Meanwhile, for the coating, combine remaining ingredients in a medium heatproof bowl and mix well. Add the nuts straight out of the oven and toss until the moisture evaporates and the nuts are lightly coated.

Spread the nuts on the oven tray and return to oven for 1 minute, then cool on tray (the coating will dry out and become a little crispy on cooling).

This nut mix will keep in an airtight container in a cool cupboard for up to 6 weeks. Makes about 2 1/2 cups.
