Springtime at Hilltop

The alfresco season is upon us... 

Spring won't let us stay in the house any longer, so here we are, celebrating the fresh air, eating and being outside. To honour such a feeling, we made a simple green frittata and took it to the sunny garden...

The afternoon light nodded at the cosmos flowers in pink, red and white, the local bees got the memo, and we all enjoyed ourselves until the sky turned purple. It is a joyful beginning to the hopeful season of spring, or as Ralph Waldo Emerson says, it is the earth laughing in flowers!

Our Green Frittata was made from small baby potatoes, spring onions, broccolini, diced onion, all arranged in beaten eggs. We served this with warm olives and a refreshing soda with a splash of bitters, mint and lemon.
