Family Recipes — Goats Cheese Tart

A quick and simple lunch option, from our family to yours...

Entertaining should be about connection. Following a simple recipe allows you to free yourself from the kitchen once your guests arrive, without any added stress.

This recipe is taken straight from Ali's family cookbook, a tried and tested favourite, and continuously requested: it is a Leek, Bacon and Mushroom Goat's Cheese Tart. The crust is built by hand, and the earthy umami ingredients are brought to life by a creamy goat's cheese. We like to pair this tart with a couple of salad options, and a refreshing beverage — a quick homemade lunch idea from our family to yours...

3 Tbsp olive oil
1 cup diced rindless bacon
3 leeks, white part thinly sliced
200g button mushrooms, sliced
Salt and ground pepper
2 sheets ready rolled flaky puff pastry
2 eggs, beaten
200g goat's cheese, crumbled

Preheat the oven to 200C
Heat the oil over moderate heat in a frying pan and add the bacon, leeks and mushrooms. Season with salt and pepper. Fry gently, without browning, for 10 minutes until the leeks are soft. Remove from heat and cool.

Put the two sheets of pastry, end to end, onto a baking tray. Crimp the two edges together, one slightly over the other, so you have a rectangle of pastry. Turn the edge of the pastry inwards 2cm all around so that you have a raised border. Spread the leek mixture inside the border. Drizzle the beaten eggs all over the leeks (don't worry if some leaks out, just discard it later) Brush a little egg over the border to give it a glaze.

Sprinkle the goat's cheese on top, place in the oven and bake for 25-30 minutes until well cooked. Remove from the oven and serve sliced, immediately. Serves 4-6
