Ginger Thyme Lemonade

We are loving these longer days; an open sky at 7pm changing from blue to gold and giving us an extra hour or two to enjoy the fresh outdoors. We're crossing our fingers that the weather warms up, and when it does, we're going to spend our extra hours sipping on this tasty little combination: a Summer Ginger & Thyme Lemonade... 

We are loving these longer days; an open sky at 7pm changing from blue to gold and giving us an extra hour or two to enjoy the fresh outdoors. We're crossing our fingers that the weather warms up, and when it does, we're going to spend our extra hours sipping on this tasty little combination: a Summer Ginger & Thyme Lemonade... 

1 cup sugar
1 cup water
a knob of fresh ginger, peeled and chopped
a handful of fresh thyme leaves, chopped using your garden scissors
2 cups fresh lemon juice

In a medium saucepan, combine the water, sugar, ginger and thyme over a medium-high heat. Stir until the sugar dissolves and remove from heat. Once cool, strain into a clean Hammered Glass Water Jug and add your lemon juice. Stir to combine. Serve into Picardie Glasses by Duralex France. You can keep your Summer Thyme Lemonade refrigerated for up to one week - ideal for when you have those impromptu guests!
