The Black Paring Knife has precise work to do — hulling strawberries, seeding chillies, deveining prawns, peeling fruit close to the skin. It's where the David Mellor taper-ground forging shows itself most clearly: steel that runs the full length of the handle, with an internal back weight set into the grip for balance in the hand rather than the blade.
The high carbon stainless steel is cast, then ice hardened to minus 80°C — a process that stabilises the steel's structure and holds an edge with unusual durability.
